Butter Crumbed Chicken With Broccoli

Guess what? I’m baaaaaaaaaaaack!!! I know, it’s been over a year since I posted anything, and I can’t believe how the time has flown by. I have had a really busy, super crazy year, and just haven’t made time for the blog. I have really missed it though, and am working on revamping everything for an all-new, easier-to-navigate site, and I have some great posts in the works. I hope you will come and check it out! It’s definitely a work in progress. I got a new theme for the site, but haven’t had a chance to customize and and fix it with all my preferences yet. I didn’t want to wait until that happened, though, to get a new post up, so HERE IT IS! I have so many recipes I need to post, so I’m starting with one of them. You are going to love it.

My son turned 9 in October, and his request for his birthday dinner was homemade pizza. That is not something that is on our current diet, due to the crust and the cheese, but we splurged for our little man’s special day and honored his request…and it was delicious!! Long story short, I accidentally bought Mozzarella and Monterey Jack cheese instead of two packages of Mozzarella for the pizza. This recipe isn’t actually for pizza but I just have to share that the pizza with the Mozzarella AND Jack cheeses actually turned out better than the one that I used only Mozzarella on, so it was actually an awesome mistake! All that to say, we had a bit of Monterey Jack left over from the pizza fixin’s, and I decided to use it to make this fantastic Butter Crumbed Chicken with Broccoli. My boys love this dish, and we hadn’t had it in a good while (again, because of the cheese and our diet), so they were thrilled that I made it. I apologize for my lack of photography skills. I actually haven’t posted as many recipes as I should have because of that–and because I don’t have pictures for most of my meals. But I am not going to let that hold me back any longer (although I will gladly take any food photography tips that anyone would like to give me!) Here is the recipe:

Butter Crumbed Chicken With Broccoli

Butter Crumbed Chicken With Broccoli


  • 4 boneless, skinless chicken breast halves (I like to use chicken tenders)
  • Onion powder and salt, to taste
  • 1 pound broccoli (about 4 cups florets), lightly seasoned
  • 1/2 cup shredded cheese--Monterrey Jack or cheddar
  • 2 Tablespoons butter, melted
  • 1/4 cup seasoned dry bread crumbs


  1. Season chicken with onion powder and salt, and cook in a nonstick skillet, over medium-high heat.
  2. While chicken is cooking, steam broccoli until just tender (do not overcook!)
  3. Pour off any juices from both chicken and broccoli and put both into the skillet.
  4. Sprinkle chicken and broccoli with cheese.
  5. Combine melted butter and bread crumbs and sprinkle over chicken and broccoli.
  6. Cover, and heat until the cheese is melted.

This recipe is ridiculously easy, doesn’t take that much time, and is quite healthy! You can use less than 1/2 cup of cheese, if you like (I think we did), and it’s still amazing. If you are on a gluten free diet, substitute gluten free bread crumbs (or make your own) and you’re good to go! Happy eating!
